Whip up this quick Mexican-inspired meal for six in just 35 minutes.

Grilled Chicken Tostadas

Pineapple refresher: Combine 3 cups pineapple chunks, 1 cup water, and 6 mint leaves in a blender; process until smooth. Transfer pineapple mixture to a pitcher. Add 2 cups cold water, stirring to combine. Serve over ice.

1. While rice cooks:
- Season chicken
- Combine slaw and green salsa
- Combine tomatoes and olives
- Toast pumpkinseed kernels

2. While chicken cooks:
- Prepare pineapple refresher

QUICK TIP: Look for fresh pineapple chunks in the refrigerated section of your grocery's produce department, or use canned pineapple chunks packed in juice. If you use canned, drain the juice before blending.
