Cheesy Soup with Roasted Tomatoes Dinner

Make a vegetarian-friendly menu that's also the ultimate in healthy comfort food. (Serves 4)

Broccoli and Cheese Soup

Broiled plum tomatoes Preheat broiler. Cut 9 plum tomatoes in half lengthwise. Scoop out and discard seeds. Place tomato halves on jelly roll pan coated with cooking spray. Sprinkle 1/2 teaspoon seasoned dry breadcrumbs over each tomato hal, and top with 1 teaspoon shredded part-skim mozzarella cheese. Coat tomatoes lightly with cooking spray. Broil 2 to 3 minutes or until cheese bubbles.

Baked potatoes 

GAME PLAN

1. Preheat broiler for tomatoes.

2. While broth for soup comes to a boil, prepare tomatoes.

3. While broccoli boils:
• Microwave potatoes.
• Combine milk and flour for soup.
• Cube cheese for soup.
• Broil tomatoes.
