1. Prepare grill to medium-high heat.
2. Arrange shrimp in the center of a large piece of heavy-duty aluminum foil. Drizzle oil over shrimp; sprinkle with 1 teaspoon Creole seasoning, tossing to coat. Top shrimp with cheese, corn, cilantro, and beans; sprinkle with the remaining 1 teaspoon Creole seasoning. Fold opposite ends of foil together; crimp to seal.
3. Place foil packet on prepared grill; cover and cook 15 minutes or until shrimp are done. Serve over hot cooked rice.

Glazed grilled pineapple
Combine 2 tablespoons dark brown sugar, 1/2 teaspoon grated lime rind, 1 tablespoon fresh lime juice, and 1 tablespoon melted butter in a small saucepan; cook over medium heat 2 minutes or until syrupy. Cut 1 trimmed, cored pineapple lengthwise into 12 long spears. Place pineapple on a grill rack coated with cooking spray. Brush half of glaze over pineapple; grill 1 to 2 minutes. Turn pineapple over; brush with remaining glaze, and grill 1 to 2 minutes.
