Pistachio-cherry couscousBring 1 1/2 cups fat-free, less-sodium chicken broth and 1/2 teaspoon salt to a boil in a medium saucepan. Stir in 1 1/2 cups uncooked couscous and 1/2 cup dried cherries. Remove from heat, cover, and let stand 5 minutes. Uncover; fluff with a fork. Stir in 1/3 cup coarsely chopped pistachios, 2 tablespoons chopped green onions, 1 tablespoon extra-virgin olive oil, and 1 teaspoon grated lemon rind.
