Frittatas are usually served for breakfast, but they also make delightful lunch or dinner entrées. Though the frozen hash browns already contain some bell pepper, we've added fresh red bell pepper for crunch and color. (Serves 4)
• Potato and bell pepper hash Heat 1 tablespoon vegetable oil in a large nonstick skillet over medium-high heat. Add 1 cup finely chopped red bell pepper and 1 (24-ounce) package frozen hash brown potatoes with onions and peppers (such as Ore-Ida Potatoes O'Brien); cook 10 minutes or until browned, stirring occasionally. Sprinkle with 3/4 teaspoon salt and 1/2 teaspoon black pepper; toss to combine.
