A Better BLT

For an appetizing presentation, slice these wraps in half on a diagonal and plate with crunchy sweet potato chips. Finish up with berry parfaits for an effortless 35-minute meal. (Serves 4)

Chicken and Bacon Roll-Ups

Sweet potato chips 

Mixed berry parfaits Combine 2 cups blueberries and 2 cups sliced strawberries in a medium bowl. Combine 1/2 cup vanilla yogurt, 1 tablespoon honey, and 1/4 teaspoon grated lemon rind in a small bowl. Place 1/2 cup fruit mixture in each of 4 parfait glasses. Spoon 2 tablespoons yogurt mixture into each glass. Top each serving with 1/2 cup fruit mixture. Garnish with fresh mint sprigs, if desired.

GAME PLAN

Total time: 35 minutes

1. Assemble parfaits, and refrigerate.

2. Make mayonnaise mixture.

3. Shred chicken and lettuce; chop tomato.

4. Assemble wraps.
