Heat 2 teaspoons dark sesame oil in pan over medium heat. Add 1/2 teaspoon minced peeled fresh ginger and 1 minced garlic clove; cook for 30 seconds, stirring constantly. Stir in 1 1/2 tablespoons rice vinegar, 1 tablespoon hoisin sauce, and 1 tablespoon low-sodium soy sauce; cook 1 minute. Return bok choy to pan; toss to coat.
