It's been one of those weeks. I'm sure you've had them.  Between meetings and housecleaning and family members in the hospital, I had to move grocery shopping and cooking dinner down on the priority list.  So it's understandable why this recipe for Enchilada Casserole from the new cookbook Easy Meal Maker caught my attention.

In the cookbook the recipe is tagged "Quick & Easy" and the total time 30 minutes.  So far, so good.  As I looked over the ingredient list, I saw that I already had all of the ingredients on hand.  In my world, that's pretty close to being a miracle!  I had ground beef and chopped onion in the freezer, cheese, butter, minced garlic, and whole wheat tortillas in the refrigerator, and beef broth, tomato sauce and taco seasoning in the pantry. Each recipe in this book comes with menu ideas for rounding out the meal and this one suggested black beans, which I also happened to have in my pantry.  I was happy that I didn't have to resort to ordering pizza.  Again.

The ease and convenience of this recipe made it a winner in my book, but in addition to being easy, it tasted great!  It's hard to go wrong at my house with ground beef, tomato sauce and cheese!  One note about the recipe: it calls for layering the tortillas and meat mixture in a 9-inch pie plate, but I used a round cake pan instead and it worked fine.

This meal is a keeper and I suspect I'll be making it again real soon since busy weeks seem to be our new norm.  Plus, it's a Cooking Light recipe with only 377 calories per serving, so we don't have to feel guilty about indulging in Tex-Mex fare.
