For an extra touch of flavor, top this dish with long Parmesan cheese curls created using a vegetable peeler.

Ingredients

  • 1 1/2 pounds medium zucchini
  • 1/2 teaspoon salt
  • 1 garlic clove, minced
  • 2 tablespoons olive oil
  • Citrus-Herb Dressing
  • Garnish: lemon slices

Preparation

  1. Cut zucchini lengthwise in half, and cut into 1/4-inch-thick wedges about 1 1/2 inches long. Sprinkle wedges evenly with salt.
  2. Sauté minced garlic in hot oil in a skillet over medium-high heat until lightly browned. Add zucchini, and cook, stirring occasionally, 8 to 10 minutes or until tender.
  3. Pour Citrus-Herb Dressing over zucchini, tossing to coat. Garnish, if desired. Serve immediately.
