The one-of-a-kind flavors of New Orleans can be enjoyed by all with this quick and easy vegetarian recipe. A medley of fresh vegetables is combined with Zatarain’s Jambalaya Mix for a lighter but no less flavorful take on one of the legendary dishes in New Orleans.

2 cups water
1 can (14 1/2 ounces) diced tomatoes, undrained
1 package ZATARAIN'S® Jambalaya Mix, Original
1 cup diced onion
1 cup chopped red bell pepper
1/2 cup sliced carrot
2 cups bite-size broccoli
1 cup thinly sliced zucchini
1/4 cup sliced green onions


Prep: 15 Minutes
Cook: 25 Minutes

Bring water and tomatoes to boil in large saucepan. Add Jambalaya Mix, onion, bell pepper and carrot; mix well. Return to boil. Reduce heat to low; cover and simmer 15 minutes.

Stir in broccoli and zucchini; mix well. Cover and cook 10 minutes longer or until rice and vegetables are tender. Remove from heat. Let stand 5 minutes. Sprinkle with green onions.
