Serves 4 (serving size: 2 slices)

1 tablespoon extra-virgin olive oil
1 1/2 teaspoons butter
1 garlic clove, grated
1 3-ounce piece of whole-wheat baguette
1 teaspoon finely chopped parsley (optional)


Preheat broiler to high. Combine olive oil, butter, and grated garlic in a small microwave-safe bowl. Microwave at HIGH 30 seconds or until butter melts. Cut a baguette piece into 8 slices. Arrange bread on a baking sheet; brush with oil mixture. Broil 1 minute (on one side) or until toasted. Sprinkle with parsley, if desired.
