Warm Pineapple Salsa

2 shallots, finely chopped
1 jalapeño pepper, minced
1 1/2 teaspoons grated fresh ginger
Vegetable cooking spray
1 1/4 cups fresh orange juice
1 pineapple, peeled and chopped
1 tablespoon chopped fresh mint
1 tablespoon chopped fresh basil
1/2 teaspoon curry powder


Sauté first 3 ingredients in a skillet coated with cooking spray over high heat 2 minutes. Add juice, and cook 5 minutes or until mixture is reduced by half. Stir in pineapple and remaining ingredients; reduce heat to low, and cook until thoroughly heated.
