Virginia Creamed Chicken

1/4 cup butter or margarine
1/4 cup all-purpose flour
1 1/2 cups milk
1/2 teaspoon salt
Dash of red pepper
1 cup diced cooked chicken
1 tablespoon sherry
6 slices toast


Melt butter in a heavy saucepan over low heat; add flour, stirring until smooth. Cook 1 minute, stirring constantly. Gradually add milk; cook over medium heat, stirring constantly, until thickened and bubbly. Stir in salt and pepper. Add chicken; cook until chicken is thoroughly heated. Stir in sherry. Spoon over toast slices.
