Vegetarian French Toast with Fruit

3 slices low sodium whole wheat bread
3 soft tofu
2/3 cup rice milk or equivalent
1 teaspoon vanilla extract
1/3 tablespoon lite syrup
1 teaspoon canola oil

Preparation

Combine all ingredients in a mixer or blender, except the bread and oil. Mix ingredients until smooth. Dip the bread into this mixture and cook in an oil coated non-stick pan until golden brown. Top with maple syrup.
