Vegetable Gumbo

Ingredients

1/4 cup bacon drippings
6 medium tomatoes, peeled and sliced
4 cups fresh okra, cleaned and cut into 1/2-inch slices
1 cup boiling water
6 fresh mushrooms, sliced
1 clove garlic, minced
1 teaspoon salt
1/2 teaspoon pepper
Hot cooked rice

Preparation

Sauté onion in drippings in a Dutch oven over medium heat until tender. Add tomatoes, okra, and water. Cover; cook over low heat 30 minutes, stirring occasionally. Add mushrooms, garlic, salt, and pepper. Cover; cook 30 minutes, stirring occasionally. Serve with rice.
