Place cutlets between 2 sheets of heavy-duty plastic wrap, and flatten to 1/8-inch thickness, using a meat mallet or rolling pin. Coat both sides of cutlets with coating mix.
Coat a nonstick skillet with cooking spray; add olive oil. Place over medium-high heat until hot. Add cutlets; cook 2 minutes on each side.
Place sauce in a microwave-safe dish; microwave at HIGH 1 minute or until heated. Spoon over cutlets; sprinkle with cheese.
