Turkey-Noodle Soup

1 turkey carcass containing about 1 1/2 pounds leftover turkey
1 large onion, finely chopped
2 teaspoons salt
1/2 teaspoon pepper
1 sprig fresh thyme
3 quarts water
Homemade Noodles


Combine first 6 ingredients in a large stock pot; bring to a boil. Reduce heat; cover and simmer 2 hours or until meat falls off the bones.

Remove bones and meat from broth; discard bones. Coarsely chop meat; return to broth.

Bring broth to a boil; reduce heat. Drop noodles into simmering soup. Cook, uncovered., 10 minutes or until noodles are tender.

Ladle soup and noodles into individual serving bowls; serve warm.
