1. In a large bowl, mix mayonnaise, vinegar, sugar, tarragon, and thyme. Add turkey and celery. Cut grapes in half. Core apple and cut into 1/2-inch chunks. Add grapes and apple to bowl. Mix gently to coat with dressing, adding salt and pepper to taste.
2. Lay lettuce on plates and mound salad equally onto leaves. Sprinkle with chopped almonds.
