Turkey Barbecue Sandwiches

3/4 pound freshly ground raw turkey breast
1 medium onion, chopped
1 (8-ounce) can no-salt-added tomato sauce
1 (7-ounce) jar roasted red peppers, drained and chopped
1/4 teaspoon salt
1/4 teaspoon pepper
2 teaspoons liquid mesquite smoke (optional)
4 (2.25-ounce) whole wheat or plain kaiser rolls


Cook turkey and chopped onion in a nonstick skillet over medium-high heat 4 to 5 minutes or until onion is tender and turkey is done, stirring until turkey crumbles. Stir in tomato sauce and red peppers; simmer 5 minutes.

Stir in salt, pepper, and, if desired, liquid smoke. Spoon turkey mixture evenly onto bottom halves of rolls, and top with remaining roll halves.
