Preheat oven to 350 degrees F. Spray a small casserole dish with cooking spray. Drain and rinse canned beans. Prepare egg replacer by whisking together 2 tablespoons of water for every 1.5 teaspoons of mix. Cut zucchini into bite size pieces. Combine zucchini, beans, frozen corn and tomato sauce in the casserole dish. In a small bowl, combine milk, egg replacer and pepper, mix well and stir into the vegetable mixture. Sprinkle cheese over the top and bake for approximately 30 minutes, until set. Serve.
