Tropical French Toast with Low Fat Milk

2 slices low sodium whole wheat bread
2 egg whites
3 tablespoon low fat or non fat milk
1/4 teaspoon coconut extract
1 Splenda® sweetener
1/3 tablespoon wheat germ
3/4 cup pineapple chunks


Whisk egg whites with milk and other ingredients except the bread and the pineapple chunks in a pie plate or similar deep dish. Add bread slice(s) and coat both sides. Let the bread absorb the egg mixture for about 1-2 minutes. Coat a nonstick skillet with cooking spray and heat to medium heat; cook each bread slice for about 2 to 3 minutes on each side until lightly browned. Serve topped with pineapple chunks
