Tomato Rice

1 cup uncooked long-grain rice
2 teaspoons olive oil
1 tablespoon tomato paste
2 cups water

Cook: 25 Minutes

Sauté rice in hot oil in a saucepan over medium-high heat 2 to 3 minutes. Stir in tomato paste, and sauté 2 minutes; add 2 cups water. Bring to a boil; cover, reduce heat, and cook 20 minutes.
