Three-Bean Barbecue Bake

2 teaspoons vegetable oil
1 1/2 cups chopped onion
1 cup chopped green pepper
1 cup chopped sweet red pepper
2 cloves garlic, minced
3/4 cup low-sodium ketchup
1/2 cup firmly packed brown sugar
1/4 cup molasses
1 tablespoon cider vinegar
1 teaspoon dry mustard
1 (16-ounce) can Great Northern beans, drained
1 (16-ounce) can no-salt-added kidney beans, drained
1 (16-ounce) can lima beans, drained
Vegetable cooking spray


Heat oil in a large nonstick skillet over medium-high heat. Add onion, peppers, and garlic; saute 5 minutes or until tender. Stir in ketchup and next 4 ingredients; bring to a boil. Stir in beans.

Pour mixture into an 11- x 7- x 1 1/2-inch baking dish coated with cooking spray. Bake, uncovered, at 325° for 55 minutes or until bubbly.
