Tennessee Skillet-Fried Chicken

2 cups all-purpose flour
1 tablespoon salt
1 teaspoon pepper
2 (3 1/2- to 4-pound) broiler-fryers, cut up
2 cups shortening


Combine flour, salt, and pepper in a plastic or paper bag; shake to mix. Place 2 to 3 pieces of chicken in bag; shake well. Repeat procedure with remaining chicken.

Heat shortening in a large heavy skillet to 350°; add chicken, and fry 10 minutes. Reduce heat; cover and continue cooking 5 minutes. Turn chicken pieces, and repeat cooking procedure. Drain on paper towels.
