Tennessee Crackling Pones

3 cups water
1 cup cracklings
1 1/2 cups cornmeal
1 teaspoon salt


Bring water to a boil; reduce heat, and add cracklings. Cook over medium heat 5 minutes or until cracklings are tender. Remove from heat, and add cornmeal and salt. Stir well.

Shape into patties, using 1/2 cup batter for each patty. Place patties on a well-greased baking sheet or griddle. Bake at 450° for 45 minutes or until pones are lightly browned.
