Tangy Citrus Icing

2 tablespoons grated orange rind
About 2 tablespoons orange juice
About 2 tablespoons lemon juice
1 (16-ounce) package powdered sugar, sifted


Combine rind and juice in a large mixing bowl. Gradually stir in sugar. Beat on medium speed of electric mixer until mixture is smooth and creamy. Add additional juice to obtain spreading consistency, if necessary. Spread immediately on cooled cake.

Note: This icing has a strong citrus flavor, making it an ideal topping for Sweet Potato Pound Cake (page 56) or any other plain cake.
