With its warm, spicy, and almost meat-like flavor and texture, this cauliflower dish can be served as a side or a vegetarian main dish that still feels hearty. As a unique way to serve cauliflower, it looks impressive but is easy to pull together. Feel free to make the yogurt sauce ahead of time.
Serves 4 (serving size: 1/4 head cauliflower)
1. Preheat oven to 450°F. Stir together yogurt, garlic, lime juice, tandoori spice, ginger, and salt. Brush yogurt mixture over all sides of cauliflower pieces.
2. Place coated cauliflower pieces on a parchment paper-lined baking sheet. Bake in preheated oven until browned and tender, 30 to 35 minutes.
