Melted ice cream forms a sweet, foamy top layer for this drink.
4 servings (serving size: 3/4 cup coffee and 2 tablespoons ice cream)

2 3/4 cups hot strong brewed coffee
1/4 cup dark rum
1 tablespoon sugar
1/2 cup vanilla low-fat ice cream
4 (3-inch) cinnamon sticks (optional)


Combine the first 3 ingredients in a pitcher, stirring until sugar dissolves. Pour into mugs, and top with ice cream. Garnish with cinnamon sticks, if desired.
