You’ve probably never considered adding Greek yogurt to sweet potatoes. You may never go back to brown sugar after you add in this delicious and innovative ingredient to a classic side.
Serves 4 (serving size: 1 potato, 2 tablespoons yogurt mixture, and 1/4 teaspoon honey)
Pierce sweet potatoes with a knife; microwave at HIGH 8 to 10 minutes, turning halfway through. Combine yogurt, pumpkin pie spice, orange rind, and ground red pepper. Halve potatoes lengthwise; sprinkle with salt. Divide yogurt mixture among potatoes, spreading to cover. Drizzle with honey.
