Sweet Potato Waffles

1 1/4 cups milk
1 cup cooked, mashed sweet potatoes
1/4 cup butter or margarine, melted
2 eggs, lightly beaten
2 cups all-purpose flour
3 tablespoons sugar


Combine milk, sweet potatoes, butter, and eggs in a medium bowl; mix well. Combine flour and sugar; add to milk mixture, stirring well.

Spoon batter into a preheated, lightly oiled waffle iron, following manufacturer's directions. Cook 5 minutes or until brown and crisp. Repeat procedure with remaining batter.
