Sweet Potato Casserole

3 medium-size sweet potatoes, boiled, peeled, and mashed (about 2 cups)
1 cup sugar
2 eggs, slightly beaten
1 cup milk
1/2 cup butter or margarine, melted
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 teaspoon vanilla extract
1/2 cup chopped pecans


Combine potatoes, sugar, eggs, milk, butter, cinnamon, nutmeg, and vanilla; beat at medium speed of an electric mixer until smooth. Spoon mixture into a well-greased 1 1/2-quart casserole. Sprinkle pecans over top. Bake, uncovered, at 350° for 1 hour.
