1/2 pound beets, cleaned and boiled
2 cups vinegar
1 cup sugar
3/4 teaspoon salt
Cut beets into 1/4-inch-thick slices; set aside.
Combine vinegar, sugar, and salt in a saucepan; bring to a boil. Add beets and cover. Reduce heat; simmer 10 minutes. Remove from heat; cover and chill.
