Strawberry Sauce Over Vanilla Ice Cream

1/2 cup sugar
2 tablespoons cornstarch
2/3 cup cold water
2 cups sliced fresh strawberries, divided
1 tablespoon butter or margarine
Vanilla ice cream


Combine sugar and cornstarch in a small saucepan; gradually add water, stirring well. Add 1/2 cup strawberries. Cook over low heat, stirring constantly, until mixture comes to a boil. Simmer 2 minutes. Remove from heat; add butter, stirring until butter melts. Stir in remaining strawberries. Cover and chill thoroughly. Serve over vanilla ice cream.
