Sticky Coconut Couscous makes an easy and tasty accompaniment to your favorite entree. We serve urry Tofu-and-Bell Pepper Skewers over the couscous.

1 teaspoon salt, divided
1 1/2 cups uncooked couscous
2 green onions, minced
1 (13.66-ounce) can unsweetened coconut milk, warm
1. Bring 1 1/2 cups water and 1/2 teaspoon salt to a boil in a medium saucepan. Stir in couscous and green onions. Cover and remove from heat; let stand 5 minutes.
2. Stir in coconut milk and remaining 1/2 teaspoon salt; let stand 5 more minutes.
