This is my favorite combination of greens - it has just the right balance of peppery, bitter, and mellow flavors. However, you can use any combination of salad greens you like. Invite friends because the recipe makes a whopping 30 cups.

8 cups sliced romaine lettuce (about 1 head)
8 cups torn escarole (about 1 head)
4 cups torn red leaf lettuce (about 1 large head)
4 cups torn curly endive (about 1/2 head)
4 cups torn radicchio (about 2 heads)
2 cups trimmed arugula (about 4 bunches)


Combine all ingredients in a large bowl, and toss well. Store mixed greens in perforated zip-top plastic vegetable bags.
