Ca' Momi, a bustling restaurant in Napa, California, is known for its rigorously authentic Neapolitan-style pizza. This one is named after the tiny white flowers that thrive in the Alps, known in English as Alpine Star and in German as Eidelweiss.

1 ball Ca' Momi Pizza Dough
1/4 cup canned coarsely puréed or ground tomatoes
1/4 cup mascarpone
1/2 cup shredded low-moisture mozzarella
1/2 cup lightly packed baby arugula
1/4 cup shaved parmigiano-reggiano cheese (use a vegetable peeler)
Extra-virgin olive oil
Freshly ground black pepper (optional)


Prep: 1 Hour, 40 Minutes
Rise: 4 Hours

1. Make dough as instructed in recipe for Ca' Momi Pizza.

2. In Step 10, top pizza with tomato sauce, spreading outward in a widening circle with the back of a soupspoon. Then scatter mascarpone in spoonfuls about 1 in. apart, followed by mozzarella.

3. Bake as instructed in recipe for Ca' Momi Pizza.

4. Finish with arugula, parmigiano-reggiano, and a drizzle of olive oil. If your arugula is mild, you might want to add a bit of freshly ground black pepper.
