For a simple side salad, Baby Spinach Salad with Blue Cheese tosses together in only 10 minutes.

2 tablespoons red wine vinegar
1/4 teaspoon salt
1/4 teaspoon pepper
1 teaspoon Dijon mustard
1/4 cup olive oil
1 pound baby spinach leaves (about 10 cups)
1/2 cup loosely packed crumbled blue cheese (about 4 oz.)
1/2 cup shelled, toasted pistachios, coarsely chopped


Prep: 10 Minutes
Combine vinegar, salt, pepper and mustard in a large bowl. Gradually whisk in oil. Toss spinach in dressing until coated. Divide among 8 plates, top with cheese and nuts, and serve.
