3 1/3 cups water
1 1/2 cups uncooked long-grain rice
1 1/2 cups chopped spinach leaves
1/4 teaspoon ground red pepper
1/4 to 1/2 teaspoon grated fresh ginger
1/2 teaspoon salt
Bring water to a boil in a medium saucepan; add rice. Cover, reduce heat, and simmer 20 minutes or until liquid is absorbed. Stir in spinach and remaining ingredients.
