Spinach-Kiwifruit Salad

3 tablespoons water
2 tablespoons rice vinegar
2 teaspoons honey
1 teaspoon prepared mustard
1 teaspoon vegetable oil
1/2 teaspoon lemon juice
1/8 teaspoon onion powder
8 fresh spinach leaves
8 Boston lettuce leaves
2 kiwifruit, peeled and sliced
Lemon rind curls (optional)

Preparation

1. Combine first 7 ingredients in a jar. Cover tightly, and shake vigorously. Chill.

2. Arrange spinach and lettuce evenly on 2 salad plates; top evenly with kiwifruit. Garnish with lemon rind curls, if desired. Serve with dressing mixture.
