Southwestern Pasta

This zesty twist on mac and cheese packs a healthy serving of protein, thanks to the beans. Our kid testers rated it as high as their favorite packaged macaroni and cheese.

Cooking spray
8 ounces cooked wagon-wheel (or any shape) pasta, al dente
15-oz can red beans in sauce, undrained
2 cups frozen corn, defrosted
10.75-oz can cheddar cheese soup
1/2 cup fat-free milk
1 cup shredded reduced-fat cheddar cheese
1 cup mild salsa


Prep time: 5 minutes
Cooking time: 2 hours

1. Coat cooker with cooking spray. Add pasta, beans, and corn. Stir in soup and milk.

2. Cover and cook on low for approximately 2 hours, until heated thoroughly.

3. Just before serving, stir in cheese and salsa.

How kids can help: Measure ingredients and add to cooker.
