Southern-Cooked Green Peas

3 cups shelled fresh green peas, cleaned (about 3 pounds unshelled)
1 cup water
1/4 pound salt pork
1/2 teaspoon salt
2 tablespoons butter (optional)


Combine green peas, water, salt pork, and salt in a small Dutch oven. Bring to a boil; reduce heat. Cover and simmer 25 minutes or until peas are tender. Drain; add butter, if desired, and toss lightly.
