Southern-Cooked Dried Lima Beans

2 cups dried lima beans, soaked and drained
4 1/2 cups water
1/4 pound salt pork, sliced
1 teaspoon salt
1/2 teaspoon pepper


Combine beans, water, salt pork, salt, and pepper in a large saucepan; bring to a boil. Reduce heat; cover and simmer 2 1/2 hours or until beans are tender.
