South-of-the-Border Cranberry Sauce

1 tablespoon canola oil
1/2 cup chopped onion
1 1/4 cups sugar
1/2 cup water
1/4 cup port wine
1/4 teaspoon ground ginger
1 (12-ounce) package fresh cranberries
3 tablespoons chopped fresh cilantro
2 teaspoons grated orange rind
1 teaspoon grated lime rind
1 minced chipotle chile, canned in adobo sauce

1. Heat oil in a medium saucepan over medium-high heat. Add onion, and sauté for 4 minutes. Add sugar and the next 4 ingredients (through cranberries); bring to a boil. Reduce heat, and simmer for 8 minutes or until cranberries pop. Remove from heat, and stir in cilantro, orange rind, lime rind, and chile. Serve chilled or at room temperature.
