Using clear vanilla extract will keep the macaroons pearly white, but if you don't have it, regular vanilla will work fine.

4 egg whites
2 2/3 cups sweetened flaked coconut
2/3 cup sugar
1/4 cup all-purpose flour
1/2 teaspoon clear vanilla extract
1/4 teaspoon salt
1/4 to 1/2 teaspoon almond extract
Stir together all ingredients in a large bowl, blending well. Drop dough by teaspoonfuls onto lightly greased baking sheets.
Bake at 325° for 18 to 20 minutes. Remove to wire racks to cool.
