Smoky Cabbage Slaw

1/2 cup chopped Oso Sweet or other sweet onion
1/2 cup diced red bell pepper
1 (16-ounce) package cabbage-and-carrot coleslaw
1 slice bacon, cooked and crumbled (drained)
1/2 cup seasoned rice wine vinegar
1/4 cup sugar
1 tablespoon canola oil
2 1/2 teaspoons dry mustard
1 teaspoon celery seeds


Combine onion, bell pepper, slaw, and bacon in a large bowl.

Combine vinegar and the remaining ingredients in a small saucepan. Bring to a boil; cook 1 minute, stirring frequently. Pour over cabbage mixture; toss gently. Serve immediately.
