Simple Salad with Parmesan

Serves 4 (serving size: about 1 1/2 cups)

2 1/2 tablespoons fresh lemon juice
2 tablespoons canola mayonnaise
1 teaspoon extra-virgin olive oil
1/2 teaspoon sugar
1/2 teaspoon freshly ground black pepper
6 cups mixed baby greens
1/2 cup halved cherry tomatoes
1 ounce shaved Parmesan cheese


Combine lemon juice, mayonnaise, olive oil, sugar, and pepper, stirring with a whisk. Add greens; toss to coat. Sprinkle with tomatoes and Parmesan cheese.
