Shrimp Scampi

Shrimp scampi is often served over rice or pasta, but the flavors of the shrimp, garlic, and lemon juice are more pronounced when you serve the dish without the starch.

1 1/2 tablespoons olive oil
1 1/2 tablespoons bottled minced garlic
1 1/2 pounds peeled and deveined large shrimp
1/4 cup finely chopped fresh flat-leaf parsley
1 1/2 tablespoons fresh lemon juice
1/2 teaspoon salt
1/8 teaspoon ground red pepper


1. Heat oil in a large nonstick skillet over medium-low heat; add garlic, and cook 1 minute. Add shrimp, and cook 5 minutes or until shrimp turn pink, stirring occasionally; remove from heat. Stir in parsley and remaining ingredients.
