Shoe-String Potatoes

4 large potatoes, washed, peeled, and cut into long, thin strips
Vegetable oil
Salt and pepper to taste


Soak potatoes in cold water to cover at least 30 minutes. Drain well and pat dry.

Cook potatoes in deep hot oil (375°) until golden brown and crispy. Drain on paper towels. Sprinkle with salt and pepper. Serve hot.
