Sherry Vinaigrette With Currants

This dressing features sherry and currants, and is extremely easy to make. Serve this vinaigrette with mixed greens.
1 cup (serving size: 1 tablespoon)

Ingredients

1/3 cup sherry vinegar
1/3 cup water
1/4 cup currants
2 tablespoons extra-virgin olive oil
2 teaspoons Dijon mustard
1/2 teaspoon sugar
1/2 teaspoon kosher salt
1/8 teaspoon freshly ground pepper
4 garlic cloves, crushed

Preparation

Combine all ingredients in a jar. Cover tightly, and shake vigorously.
