1/2 cup thinly sliced red onion
1/4 cup chopped fresh parsley
1 tablespoon olive oil
1 tablespoon fresh lemon juice
1 teaspoon honey
1/4 teaspoon crushed red pepper

Preparation

Combine carrots, onion, parsley, olive oil, lemon juice, honey, and crushed red pepper. Let stand 10 minutes.
